The Details
100% organically cultivated Chardonnay from 40 year-old vines planted to clay/limestone with marly subsoil and southern exposure in the Grand Bessy vineyard of northerly Burgundy capital of Dijon. Grapes are hand-harvested, directly pressed and spontaneously fermented in neutral barrel prior to élevage for 1 year also in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
