The Details
100% organcially Pinot Noir from the historic Plombiers, the en Bessy vineyard more specifically. Vines are 25-40 years-old and planted to clay/limestone soils. Grapes are hand-harvested and spontaneously fermented in Marc's "whole cluster sandwich" method where 2/3 of the tank are whole-cluster grapes (top and bottom) with 1/3 destemmed grapes in the middle. Spontaneous fermentation in tank prior to pressing. Élevage for 12 months in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
