The Details

50/50 Grenache Blanc & Bourboulenc négoced from organic vineyards in the Southern Rhône. Grapes are hand-harvested from 7 and 40 year-old vineyards, respectively. Whole-bunch direct pressing upon arrival at the cellar. Fiberglass for the Grenache Blanc and stainless steel for the Bourboulenc, the GB is then transferred to neutral barrel whereas the Bourboulenc stays in stainless steel. Aged separately for 5 months prior to blending, all in stainless steel and a further rest of 2 months before bottling unfined, unfiltered, no additional SO2.
