The Details
Country Gamay - good fruit with a little animal rusticity to it! Grapes are hand-harvested from 50 year-old vines planted over schist. Whole-bunch spontaneous fermentation for 2 weeks before pressing. A brisk élevage of ~6 months before bottling unfined, unfiltered, no additional SO2.
