The Details

100% biodynamically cultivated Jacquère from 50 year-old vines on limestone scree soils. Grapes are hand-harvested, directly pressed to ovoid fiberglass vat for spontaneous fermentation and élevage with perpetual suspension/motion of the lees due to the shape of the vat. Bottled after 10 months unfined, unfiltered, minimal (<20ppm) added SO2.
