The Details
Thanks to our meticulous care and limited yields, we were able to achieve a harvest of high quality. Our dedicated and friendly team, including our three donkeys, manually harvested the grapes over a period of three weeks. The grapes were carefully picked by hand and underwent a brief fermentation process in whole clusters. We only used indigenous yeasts for fermentation, which enhanced the aromatic complexity and unique characteristics of our terroir. The grapes were then vatted for one week, with a focus on preserving the fruit flavors rather than extracting excessive tannins. The wine was vinified and aged in stainless steel vats.
