The Details

The 2021 vintage is a dry vintage of excellent quality. Despite the damage caused by frost in the region, our hillside vineyards, protected by pine forests and scrubland, were unaffected. Our biodynamic preparations have supported and enhanced the growth and development of our grape clusters.
Thanks to our meticulous care and limited yields, we were able to achieve a harvest of high quality. Our dedicated and friendly team, including our three donkeys, manually harvested the grapes over a period of three weeks. The grapes were carefully picked by hand and underwent a brief fermentation process in whole clusters. We only used indigenous yeasts for fermentation, which enhanced the aromatic complexity and unique characteristics of our terroir. The grapes were then vatted for one week, with a focus on preserving the fruit flavors rather than extracting excessive tannins. The wine was vinified and aged in stainless steel vats.
