The Details

100% Chenin Blanc from two plots, both clay and limestone. The grapes are hand-harvested and direct pressed into stainless. Fermented with wild yeasts. 1/3 of the grapes get racked into old oak for a brief aging period. Blended and then bottled unfined, unfiltered with no SO2.
