The Details

95% Grenache Gris, 5% Grenache Noir from a combination of 5 & 40 year-old vines organically cultivated at 330ft elevation in the Roussillon. Grapes are hand-harvested and whole-bunch co-macerate/spontaneously ferment for 7 days prior to pressing. Matured for 5 months in sandstone amphora prior to bottling unfined, unfiltered, minimal (11ppm) added SO2.
