The Details

100% Chardonnay from a 1.2 hectare plot named ‘La Pierre’ in the hamlet of Buvilly which is not far from Pupillin. Grapes are hand-harversted from organically cultivated 50 year-old vines planted to iridescent marl soils. Whole-cluster directly pressed to stainless steel. Spontaneous fermentation prior to transfer to neutral 400L barrel for 12 months élevage. Bottled unfined, unfiltered, 18ppm additional SO2.
