The Details

100% Savagnin from multiple higher elevation parcels (~400m) within the Cul de Brey vineyard. Grapes are hand-harvested from young and old vines (15-80 years-old) planted to marly limestone gravel soils. Whole-cluster directly pressed to neutral 300L barrel. No stirring of the lees. Spontaneous fermentation for 2 weeks prior to aging of 14 months also in neutral barrel. Bottled unfiltered, coarsely fined, minimal (~25ppm) added SO2.
