The Details
100% Gamay from old-vines, the grapes are hand-harvested and semi-carbonically macerate for 11 days prior to aging in fiberglass vat for 7 months. Unfined, unfiltered, no additional SO2. 13%ABV
Bon Pas is the estate of Nicolas Bompas.
Before starting his own estate he worked in some wonderful estates such as Gramenon and Cras. Plus for the last couple of years he has also been a winemaker at Romuald Valot.
In 2021 he decided to settle in Beaujolais and has slowly started to purchase vineyards, of which he currently has only a small holding. The vines are organically farmed with the use of horses for the vineyard work. The winery is located in Saint Etienne des Ouilleres and no additions are used including sulphur.
