The Details
70% Grenache, 20% Syrah, 10% Carignan from Jajakistan - Domaine du Possible aka Loïc Roure in southern France. Grapes are hand-harvested from 55 year-old vines planted on a schistous terrace. Vinified separately, semi-carbonic maceration of 1 month for Grenache, while Syrah and Carignan semi carbonically macerate for 2-3 weeks prior to pressing. Spontaneous fermentation and aging in concrete vat. Bottled unfined, unfiltered, minimal (7ppm) added SO2.
