The Details
From biodynamically cultivated vines that range in age from 30-120 years-old, this landmark cuvée from the trailblazing biodynamic winegrower of France's deep south is composed of Carignan, Mourvèdre, & Syrah. The grapes are hand-harvested and whole-bunch macerate for up to 10 days while spontaneous fermentation takes place and the wine is pressed thereafter into 500L neutral barrel where it rests for 10 months prior to being bottled unfined, unfiltered, minimal added SO2. 13%ABV
