The Details
100% Jacquère from Sukhwan Ha whose new project comes after the establishment and long run of the legendary natural wine restaurant Les Passe-Temps in Lyon closed during Covid. Some of his training included a degree in Beaune and an internship with Emmanuel Houillon / Domaine Overnoy in the Jura.
Settling in Savoie, this is from organically cultivated vines on the clay/limestone of Chignin, more specifically Torméry. Grapes are hand-harvested, and pressed before spontaneous fermentation and aging for 1 year in stainless steel. Bottled unfined, unfiltered, no additional SO2. 10% ABV
