The Details
This wine is a combination of Grenache, Merlot, and Syrah grapes that were hand-harvested from vines grown in blue marl, chalk, and limestone soils. It is made using a saignée method, where a portion of the red juice that is macerating in the tank is removed. The fermentation process uses wild yeasts and does not involve temperature control. After a 6-month aging process, the wine is bottled without fining or filtering, with a small amount of SO2 added. When first opened, it has a fresh aroma of white flowers and a fruity palate with hints of plums. As it develops, it transforms into a savory and ripe tomato flavor, creating a refreshing experience.
