The Details
This is a fresh white-flower aromatics and plummy-palate rosé that turns into a kind of savory-vegetable (think ripe tomatoes) at the back of the palate in the most refreshing manner. A staff favorite, this rosé is from Domaine Henri Milan in St. Rémy-de-Provence in southern France.
Vinification: This is a blend of Syrah, Merlot, and Cab Sauv (made in a saignée style) hand-harvested from vines grown in blue marl, chalk, and limestone soils. Spontaneous fermentation, ambient yeasts, no temp control. The wine is bottled (after a 6-month élevage) unfined, unfiltered, with a minimal addition of SO2.
