The Details
This is Sauvignon Blanc at its fullest and most vibrant (excluding its macerated expressions), where ripe quince meets a turbid vegetal note characteristic of sancerre -- Cher Blanc at its apex from Domaine La Taupe working in Thésée, Loir-et-Cher.
Vinification: 100% Sauvignon Blanc hand-harvested from young vines grown in the ancient riverbed of the Cher Valley whose primary subsoil is composed of limestone. The grapes are directly pressed into tank where they spontaneously ferment (ambient yeasts; no temp. control) over the course of five days. The wine is then transferred to old oak barrels where the wine matures for up to a year. Bottled unfined, unfiltered, no additional SO2.
