The Details

100% Melon de Bourgogne from a single parcel grown on schist. Grapes were hand-harvested and pressed in a pneumatic press. Fermented using wild yeasts and cold clarified. Ages sur lie in underground vats lined with glass tiles for 7 months before bottling unfined, unfiltered with no added SO2, though some SO2 added during the vinification stage.
