The Details

Cru Beaujolais. 100% organically cultivated Gamay (40-80 year-old vines) planted in sandy loam/granite soils. The grapes are sorted and spontaneously ferment whole-cluster in concrete vat for 12 days. Pressed to 30hL foudres where the wine rests in an 18-month élevage. Bottled unfined, unfiltered, minimal added SO2 at bottling. 12.5%ABV
