The Details

100% Sans Soufre Savagnin! From 4 different parcels around the town of Cesancey in the Jura. Grapes are hand-harvested from vines that range in age from 8-70+ years-old that are planted in white marl/limestone soils. Directly pressed and spontaneously fermented separately in demi-muids prior to blending. 22 month topped-up élevage thereafter. Bottled unfined, unfiltered, no additional SO2. Stunner.
