This is a lively, super fun co-ferment meant to be drunk with a chill from Jean-Daniel and Thomas Ozil of Domaine Ozil who tend 16 hectares of vines in their fifth-generation polyculture farm in the south of central France's Ardèche not far from the Gorges de l'Ardèche and the Chauvet-Pont-d'Arc Cave.
Tasting Notes: Light juicy red from the southern Ardèche. A bit of spritz, bright red fruit, macintosh apple. Drink Chilled.
Vinification: A blend of Grenache Noir, Blanc, and Syrah hand-harvested before co-carbonic-maceration and a gentle pressing. The wine is transferred to tank where it sees a 6-8month élevage. Bottled unfined, unfiltered, no additional SO2.
