The Details

100% Loin de L'oeil from biodynamically cultivated vines in Gaillac - grapes are hand-harvested, directly pressed (slowly/gently) in a pneumatic press. Spontaneous fermentation and aging prior to bottling (prior to the completion of primary fermentation - i.e. with a resultant touch of spritz). Unfined, unfiltered, minimal (15ppm) added SO2.
