The Details
100% Gamay from organically cultivated vines on the opposite side of the Chassignol slope in Moulin-à-Vent. Named for the large granitic outcrop at the top of the slop, this bottling's grapes are hand-harvested and whole-cluster spontaneously ferment for 20 days in concrete tank prior to élevage in concrete and neutral wood of various sizes for 8-9 months before being bottled unfined, unfiltered, minimal (<15ppm) to no added SO2 depending on vintage.
