Ayse, Savoie, French Alps. 100% sparkling Gringet. All primary fermentations use native yeasts and élevage typically occurs in cement eggs. Aged for two years on the lees before disgorgement. Champagne yeast is used for the secondary ferment. No dosage. Unfined, unfiltered, no SO2.
