The Details
90% Pinot Noir, 10% Chardonnay from the highest elevation vineyards in Champagne in Champignol (~369 meters ergo the name). Grapes are hand-harvested from biodynamically cultivated vines and whole-bunch pressed to large neutral foudres of oak from trees harvested in the forests surrounding the vineyards. This NV bottling is a blend of 2 and 5 year-old wines. Spontaneous fermentation and unfined, unfiltered, with little to no SO2 (dependent on the vintages) used in the cellar! Dumont does practice a bit of dosage which is the house style to temper the bracing acidity of their high elevation vineyards - 4 g/L dosage.
