The Details

Organically cultivated Pinot Noir from a single parcel of older vines in Champ Mechain – this is a special bottling of the ‘coeur de cuvé,’ aka the heart of the wine – a selection of the middle of the press, regarded as the purest and most aromatic fruit, an ancient practice in Champagne but made more prominent in modern times by Vilmart. Sandstone amphorae in the cellar here as well. Here is Elise’s take on it – créme de la créme, in essence and idea. Unfined, unfiltered,very low to no additional SO2, vintage dependent.
