The Details
Vinification: 60% Weissburgunder and 40% Grauburgunder, the grapes are hand-harvested from ~30 year-old vines grown in limestone, sandstone, and loess soil. The grapes are foot-stomped and basket-pressed though not before 3-4 weeks' worth of maceration. Spontaneous fermentation is kickstarted with only the help of native yeasts in tank. The wine ages for 10 months in old barrique (Domaine Dujac) on its fine lees. Light filtration, unfined, minimal SO2 at bottling.
