The Details
Vinification: 100% Pinot Noir hand-harvested from 30 year-old vines grown in sandstone/limestone/loess soils. The grapes are macerated for 4-6 weeks and pressed in a small basket press. 90-100% whole-cluster fermentation is kickstarted with only the help of native yeasts. Aging in used barrique sourced from Domaine Dujac (the Burgundy estate). Unfined, unfiltered, with a tiny (~25mg/L) addition of SO2 at bottling.
