About the wine

100% Xarel-lo from 3 small plots of bush vines grown in calcareous clay. Spontaneous fermentation is followed by a short élevage (6-9 months) in a mix of used french oak / concrete egg. Unfined, unfiltered, minimal SO2 at bottling.
