The Details

Maybe Nebbiolo (Fabio doesn't want to say) from organically cultivated young vines in Clay/Limestone soils. This wine could technically make a Barbaresco; the grapes are hand-harvested and macerate for 2-3 weeks prior to spontaneous fermentation & aging in homemade porcelain & stoneware vessels. Bottled unfined, unfiltered, no additional SO2 in old Travaglini Gattinara bottles. The name means 'underwear' and is yet another thumb in the eye of local bureaucracy seeing as this wine could be bottled under Barbaresco, but Fabio will do with Nebbiolo as he likes.
