The Details
Dolcetto + a dash of Nebbiolo (with a high content of biogenic amines) from organically cultivated vines planted in clay/limestone soils. Grapes are hand-harvested, destemmed, macerate for 2-3 weeks and spontaneously ferment in homemade porcelain & stoneware vessels for 6+ months. Bottled unfined, unfiltered, no additional SO2.
