The Details

Organic. 100% Chardonnay. The cru d’origine series is an exploration of terroirs outside of Nowack’s home in Vandieres. Each year is a different village. From a single vineyard in Mancy in the Cote des Blancs on fractured chalk soil, a rarity for Nowack. The site is cold and surrounded by forest, allowing for a long and late ripening harvest. Due to space constraints, this wine was pressed for Nowack by Laherte Freres. The secondary fermentation was started by fresh juice from the vineyard’s 2017 fermentation. Bottled unfined and unfiltered, with no dosage, disgorged in February 2025.
