"Dorothy, we are not in Long Island anymore! But we’re still in New York, in the fertile playgrounds of New York. For “Uplands,” the apples come from Livingston Manor and Hillsdale, NY, with a focus on higher elevations (thus the term “Uplands”) and a mix of wild trees from the Catskills and organic orchard fruit from closer to the Taconic range.
It’s fascinating, and obvious, the language of terroir because this cider is completely and utterly different than the others. It is acid driven, cooler, leaner, sharper feeling – it’s punchy, a bit rustic compared to the “Suburban Moraines.” It’s super compelling."
