The Details
Tasting Notes: Zippy, crisp and refreshing. Strikes a perfect balance between fruit and salinity. A crushable rose for when the temperature hits 65, Mariah Carey is blasting from your speakers and water isn’t quite quenching your thirst well enough. Drink cold with fresh veggies and a bowl of hummus.
Vinification: 60% Pinot Noir, 40% Pinot Gris, these grapes are sourced from the two separate vineyard sites that they are grown at: Sophie’s Vineyards and BeckenRidge Vineyard (Willamette Valley AVA). The soils here range from a marine sedimentary composition to a volcanic composition. The Pinot Noir is picked first, so the grapes retain a higher acid and pleasant phenolic ripeness before being directly-pressed and transferred to an egg-shaped fermentation vessel where fermentation is kickstarter by native yeasts. The Pinot Gris is also directly pressed, and then spends 3 days on the skins. The juices are blended and aged together for 5 months in neutral french oak. Unfined, unfiltered, no additional SO2. 12.6% ABV.
