The Details

100% Fumin from old-vines at very high elevation (800m and up) in the Val d'Aosta of northern Italy on the border with Switzerland and France. Grapes are hand-harvested from a parcel with southern exposition and whole-bunch spontaneously ferment in fiberglass vat with daily punchdowns for 2 weeks before pressing. The wine then ages for 18 months in large neutral barrel before bottling unfined, unfiltered, minimal added SO2.
