The Details

100% biodynamically cultivated Chenin Blanc in Vouvray's flinty, white-limestone (tuffeau) soils. The grapes are hand-harvested, and directly pressed. The juice spontaneously ferments over 4-6 weeks prior to racking to old tonneaux and stainless steel tank for a 3 month maturation sur fine lees. The wine is then coarsely filtered and bottled for secondary fermentation. 2-3 years sur lattes prior to disgorgement. Light dosage. Unfined, minimal added SO2.
