From Percy Selections: "100% gamay, raised in demi-muid. Rather than homogenize them, François practices the old Burgundian tradition of bottling each barrel individually, when it seems ready. As a result, each year takes on multiple personalities depending on the barrel in which it was raised. This barrel of Ermitures was a new one. You read correctly, new oak barrel! Good one to lay down in the cellar for 2025."
