The Details
A ridiculous, pitch-perfect Vin Jaune. We hate to categorize as such, but this may very well be the best Vin Jaune we've ever tasted. Bravo, Marin.
100% Savagnin from 40- to 80-year-old vines, cultivated biodynamically and planted at the "Au Barbi", "Sauvagny" and "La Vasée" vineyard sites, which have blue marl soils. The vinification is natural: 100% de-stemming, food treading of the grapes, gentle pressing, indigenous yeasts, 48 hours of settling by gravity, transfer into 228-litre barrels after malolactic fermentation for 6 years of maturation sous voile (or under a ‘veil’ of flor). Bottled on the 18th of February 2023, with sulphites used only sparingly.
