The Details

(From Romain Paire) 100% Gamay from 40 year-old organically cultivated vines in the Côte Roannaise. Grapes are hand-harvested, and spontaneously ferment 50% whole-cluster, 50% destemmed with most of the grapes seeing a short 4-day maceration though blended with a small proportion that sees a longer, 2-week maceration. Aging for 10 months in concrete and amphora before bottling unfined, unfiltered, minimal added SO2.
