The Details
From organically cultivated vines in Tavel, this is Gaël Petit's iconic deep Tavel rosé. Grapes are hand-harvested, and whole-cluster macerate for 5 days before pressing. Lightly crushed clusters are layered with intact whole-clusters. Some grapes, however, are kept separately and directly pressed. These portions are kept separate (direct press about 40% of the mix, all in stainless; the whole-cluster portion about 60% of the mix is in neutral barrel). The wines are blended, rested for 6 months then bottled unfined, unfiltered, minimal (~10ppm total, 5ppm added during élevage, 5 at bottling) added SO2.
