100% Savatiano from old, low-yielding vines. Wild yeast fermentation, unfined and unfiltered, with zero additions. 1 week of skin-contact. This wine is ALIVE. Ripe apricot, cashews and toasted almonds, star anise dust, and a long tannic finish. Magnificent transition from a salty feta salad to monkfish.
