The Details
100% Chardonnay from Frontenay-pres-Chablis, (one of a VERY few in the region to practice certified) organic viticulture. A combination of old (67 year-old) and young vines planted over Limestone, Clay, Kimmeridgian, & Marl soil.
From the importer:
Gently harvested and whole bunch pressed into stainless steel for a long, natural fermentation. On lees for about 12 months, then racked into stainless steel for roughly 12 months aging. Lightly fined with bentonite and filtered with very low SO2 additions prior to bottling.
