The Details

100% Malvasia from 100 year old vines. Hand-harvested, destemmed, and pressed in a basket press. The wine is fermented with wild yeasts in stainless steel on the skins for about 14 days (full malolactic fermentation is completed), and then aged in the same vat on the lees. Unfined, unfiltered, no SO2.
