The Details
This is an exclusive pét-nat bottling just in time for summer. Aromatic with tight, lip-smacking acidity — crisp mountain bubbles!
Vinification: Silvaner blended with Weissburgunder (Pinot Blanc), the grapes were hand-harvested from a combination of young and old-vines grown in jurassic (white and brown marl) soils during 2018’s harvest and underwent spontaneous fermentation with only the help of native yeasts. As is typical of the Ancestral Method, fermentation finishes in bottle. The wine was disgorged in February 2019. Unfined, unfiltered, with no additional SO2.
