The Details
100% Sauvignon Blanc from Touraine. Grapes are hand-harvested and racked off of the gross lees for 18-24 hours. Spontaneous fermentation and élevage takes place in stainless steel tank, concrete vat, and stainless steel for 6-9 months prior to being bottled unfined, coarsely filtered, minimal added SO2. 11.5%ABV
