The Details

From the mentee of Pat Desplats & Thierry Beclair, this is Houas Boukella's maiden vintage on his own with some of Thierry's fruit & grapes planted at his wife's family's farm, all located in Rochefort-sur-Loire in Anjou. 'Iflissen' is composed of Grolleau Gris & Chardonnay macerated for 10 days in separate buried amphora, blended thereafter with directly pressed Sauvignon Blanc, Chenin, & Cabernet. Spontaneous fermentation and élevage for 6-9 months in fiberglass prior to bottling unfined, unfiltered, no additional SO2. 12.5%ABV
