The Details
Procanico + Ansonica from 50-70 year-old biodynamically cultivated vines on the Tyrrhenian Coast of Toscana. Grapes are hand-harvested, and vinified separately: Ansonica macerates for 1 month while the Procanico sees a slow direct press. Blended and aged for 6 months before bottling unfined, unfiltered, minimal added SO2.
