The Details

 100% Chardonnay from ~60 year-old vines planted by Emmanuel’s father, the eponymous Jacques Lassaigne. Grapes are from the chalky slope on the farthest eastern portion of the hill. 24 months in a combination of stainless steel and old Burgundy barrels. Hand-disgorged (as all Lassaigne Champagnes are) after 4 years sur lattes.
