Auvergne. 100% Gamay d'Auvergne from 70-80 year old vines. Grapes are hand-harvested, half destemmed and half left whole cluster. The fruit undergoes a semi-carbonic maceration and ferments with wild yeasts in tank, followed by a resting period in old barrel. Unfined, unfiltered, no SO2.
