The Details
100% Gamay from 40 year-old vines planted in limestone dominant soils in the Auvergne. Grapes are directly pressed and spontaneously ferment prior to blending with saignée-rosé juice of the same parcel's grapes. Natural secondary fermentation in bottle. Aged 6 months sur lattes prior to manual disgorgement. Bottled unfined, unfiltered, no additional SO2. 12%ABV
